French-Canadian Turkey Stuffing

This recipe makes stuffing for a 16 to 20 lb. turkey.

INGREDIENTS
1 1/2 lb. lean ground pork
1/2 1b. lean ground beef
6 to 8 potatoes (medium size)
2 to 3 onions (medium size)
12 saltine crackers
poultry seasoning (Bell’s)
salt
pepper

DIRECTIONS

Boil potatoes in jackets. Break up and sauté pork and beef.

Dice onions very fine. Crush crackers.

Mash potatoes and combine with pork, beef, onions, and crackers.

Add poultry seasoning, salt, and pepper to taste.

Stuff your bird.

NOTES

Make extra stuffing and cook it in a casserole dish alongside the turkey. Pour turkey broth over it a couple of times to give it some of that “inside the bird” flavor.
